Easy Cornbread Casserole

This recipe was given to me by a friend many years ago and has become a favorite here. Every time someone new tries this dish, I’m always asked for the recipe. It’s a great side dish for Thanksgiving and incredibly easy to make:
Cornbread Casserole
1 can whole kernel corn (undrained), 15 oz.
1 can cream style corn, 15 oz.
1 (8 oz.) carton sour cream
1/2 c. melted butter
2 eggs, well beaten
1 box Jiffy corn muffin mix
Mix all ingredients (except corn muffin mix) together. Add muffin mix. Pour in 9×13 inch greased baking pan. Bake 45 minutes, 350 degrees.
Serves 4-6.
Hope you enjoy it!
And on a side note, if you have not seen The Blind Side in the theater yet, SEE IT! It’s a fantastic movie. Even my 9 year old son loved it!

omg, we make that every Thanksgiving! I love it!

I am not a real fan of corn dishes but I will take your advice about the movie. The kids want to see a couple over the holiday and I wasn’t sure about this one. Thanks for the thumbs up.

I really appreciate this recipe as I’m always on the lookout for new side dishes. I’m thinking this would also be amazing with chili con carne.

I’ve heard people call it that when they add thins like peppers and cheese to it. I bet it’s good that way too.

I was supposed to go see that today but we got there a little late and it was just about sold out, so I’ll go SOON. It’s on my MUST SEE list!
As for the corn, I have a similar recipe, but it doesn’t include sour cream, so maybe adding that will make it more moist? Yum. I also just found a recipe online for creamed corn in the Crock Pot and it looks SO good. Can’t wait to try both!
