Easy Cornbread Casserole

cornbread puddingThis recipe was given to me by a friend many years ago and has become a favorite here.  Every time someone new tries this dish, I’m always asked for the recipe.  It’s a great side dish for Thanksgiving and incredibly easy to make:

Cornbread Casserole

1 can whole kernel corn (undrained), 15 oz.
1 can cream style corn, 15 oz.
1 (8 oz.) carton sour cream
1/2 c. melted butter
2 eggs, well beaten
1 box Jiffy corn muffin mix

Mix all ingredients (except corn muffin mix) together. Add muffin mix. Pour in 9×13 inch greased baking pan. Bake 45 minutes, 350 degrees.

Serves 4-6.

And on a side note, if you have not seen The Blind Side in the theater yet, SEE IT!  It’s a fantastic movie.  Even my 9 year old son loved it!

    I’ve heard people call it that when they add thins like peppers and cheese to it. I bet it’s good that way too.

    As for the corn, I have a similar recipe, but it doesn’t include sour cream, so maybe adding that will make it more moist? Yum. I also just found a recipe online for creamed corn in the Crock Pot and it looks SO good. Can’t wait to try both!
