Best Chicken Salad

chickenI’ve made this chicken salad for several bridal showers and luncheons. It’s  really easy to make, unique in it’s taste and only about 4 weight watcher points.

The pecans give it a slightly smoky taste and the dried cranberries give it a subtle sweet/sour kick.

Serve it with fresh sweet rolls or over a bed of lettuce.

Cranberry Pecan Chicken Salad

Ingredients:

  • 4 cups of cubed cooked chicken
  • 1 cup pecans, coarsely chopped
  • 1 rib celery, finely diced
  • 1 cup dried cranberries
  • 1/3 cup light mayonnaise
  • 1/3 cup vanilla yogurt
  • 2-3 tablespoons of dill
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions:
Combine all ingredients in large mixing bowl. Mix well until thoroughly combined. Adjust shallot and seasonings to taste. Transfer to an air-tight container and refrigerate for 30 minutes or more to allow flavors to meld. Serve.
